From one beer to the next, the Brasserie L'Ale'Ouët will introduce you to the complex world of brewing. From locally-processed barley to fine bubbles, the brewers combine self-build boilermaking with the alchemy of raw materials.
Whether top-fermented, bottom-fermented or wild, the taste of bubbles has been driving us for over 15 years! Born of a farming project in 2009, the L'Ale'Ouët brewery has grown over the years to produce around twenty different beers. Vincent, Bertrand and Rémi joined forces in a cooperative venture.
Their commitment is as much to working with raw, local organic raw materials as it is to recycling bottles and equipment. The DIY spirit of the brewery has been anchored from the start. Self-build, ...design and recovery are our watchwords for making and adapting our vats.
Our beers are produced using locally malted barley from the Ardèche region and organic hops from France. We create a wide range of beers, from light bottom-fermented styles to strong ales and even well-roasted stouts. Wild fermentations are also used through exchanges with natural wine growers to seek out indigenous ferments.
A range of non-alcoholic drinks is also produced, including various lemonades. The recipes are based on fresh fruit pressed according to the season. Acidity, fine bubbles and low sugar content... for guaranteed freshness on the palate!
